~ Cantina Paolo Scavino ~
This past July I has the pleasure of chatting with family proprietor Elisa Scavino and since that time, have been waiting for cooler weather to open one of her family’s wines with a little more cellar time behind it.   This past weekend, with amazing roasted stuffed pork chops,  the 1998 rose to the occasion. 
The 1998 Paolo Scavino Barolo is still a massive wine. Decanted for 60 minutes, the wine is an impenetrable garnet red in the decanter and only lightens imperceptibly in the glass.  The aromas on the wine are nothing short of classic and perfumed.  There’s ripe cherry, roses, fennel and cracked pepper. Penetrating.  On the palate, the wine is medium bodied with an elegant core of ripe cherry framed by spice, fennel and earth notes.  However, on the finish, the tannins clamp down fairly hard and the wine is still rather chewy. With the meat, the finish lengthened nicely and the spicy cherry notes returned, but this still has some tannins left to resolve.  The balance seems to be there for additional aging, but I really like this now. 93 points and slightly more masculine than the 2001 Barolo I tried in April 2012.
